Is there an easy way to find which server has wsus installed
On it and which updates that server is applying

This will tell you which server is your WSUS server, this is configured by Group policy



reg query "HKLM\SOFTWARE\Policies\Microsoft\Windows\WindowsUpdate" /s


the only way to tell what updates are are applied, is to go to this server and verify which updates are approved.
