Also the individual site conditions can interfere with the signal, type of walls, type of paint on the walls, height of the ceiling, type of ceiling. Essentially any object in the path of the signal will have an impact, some materials reflect the signal some absorb.
Additionally what type of attena you use effects the wireless signals ability to propogate. Different attena's provide different propagational lobes and decibel ratings. Also the power output is different between Access points say from Cisco verses Proxim. In regards to interference, many systems in a building may casue problems such as security systems or even cordless phones if they are using the same frequency band as the wireless network.
When I perform a wireless sight survey, I bring in a ladder that is at least as high as the ceiling and also one that can get me above the ceiling near the roof. I temporary mount the device and then walk around with a laptop with a wireless card and see what position and height provides the best coverage based upon the needs of the site.
