Question : Rebuilding exchange server from scratch

What would be the best approach if I wanted to rebuild our mailserver. We have an NT4 network with exchange 5.5. We are looking at rebuilding our mail-server from scratch and would like to know what would be the best way to backup the mailboxes for all our users and then restore them to newly rebuilt exchange server in a way that would be transparent. Keep in mind that the majority of our email is kept inside the exchange store but users do have archive.pst files located on another server in the domain where they can archive any old email as well as personal address books also located on another server in the domain.
