Is there a way to create a multi-domain SSL using self-signed methods? I would like to put multiple domains on one SSL certificate to be used across many websites on the same server.

This should guide you in the right direction. By default IIS does not deal with subject alternatives, so there is a small fix command to run, the article should guide you through it.
