Question : Assign User Rights to LDAP Fields

I need to know the steps to assign a user specific rights in netware 6 with edirectory to assign a user rights for certain LDAP fields.  We are currently trying to integrate a piece of custom software to authenticate using our eDirectory, however the anonymous user does not have access to the 'cn' field.  I need to know how to allow anonymous access to this field (via ldap proxy, or other means).

You do it through the anonymous BIND proxy use, as you surmised.  That user (which you have to create) has very specific and very limited trustee rights to certain attributes, at the top of the tree (so they inherit down through the whole tree...)
