Question : Multiple DHCP for each VLAN

In review I see everyone is referring to a ip-helper address under each vlan interface.
Can I substitute any DHCP per vlan in this statement? I would like to run 3 DHCP servers, each in their own vlan with 1 router.  Is this possible?

again, don't forget the forward-protocol portion; else the router hasn't a clue which types of directed-broadcast to proxy across. bootp is not assumed.
