Mail enable takes over 5 minutes to load. Server is not showing excessive memory or processor usage. Is there a setting / registry edit / update out there to address this issue?

Check DNS resolution/records and general connectivity to domain controllers.  Are you doing any large operations at the Exchange server itself like a backup?  Have you tried another account or recreating the user profile you are using?  I assume you are performing the operation directly on the Exchange server itself.
